Easy and Delicious Thanksgiving Dishes

It's been an interesting year and now is a wonderful time to be grateful so while we reach out to our families here and afar, these healthy Thanksgiving recipes will bring seasonal cheer to your kitchen. Thanksgiving Stuffing Recipe

2 servings | 1 Starch, 1 Thermo-Snack, 1 Vegetable

2 slices low-carb bread (15g or less carb per slice), cubed

¾ cup celery, diced

2 green onions, sliced

¼ cup carrots, finely diced

2 packages Chicken Noodle Soup Thermo-Snacks®

8 ounces water

¼ teaspoon salt-free poultry seasoning

1 teaspoon Morton® Lite Salt

¼ teaspoon freshly ground black pepper

¼ teaspoon rosemary

½ teaspoon ground sage

Preheat the oven to 350℉. Arrange bread cubes on a baking sheet. Allow to bake until bread has become dried out and slightly brown. Remove from the oven. Mix all ingredients and bread cubes in an oven-safe casserole dish and allow to bake uncovered for 10–15 minutes. Remove from over and serve while still warm. Enjoy!


Sweet Autumnal Acorn Squash

# of Servings Vary By Squash Size | 1 Starch, 1 Fat

1 acorn squash

2 teaspoons butter, melted

2 packets brown sugar stevia

½ teaspoon cinnamon

¼ teaspoon nutmeg

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon fennel, crushed

Preheat the oven to 375 ℉. Carefully slice acorn squash in half. Scoop the seeds and middle sections out with a spoon. Place both halves facing upwards on a baking sheet. Brush melted butter over both pieces. Sprinkle brown sugar stevia, cinnamon, nutmeg, salt, black pepper and fennel over both pieces. Cover sheet with aluminum foil. Bake for 45 minutes or until squash is completely tender. Remove aluminum foil and place under the broiler for 3-5 minutes. Remove from over and scoop acorn squash into a bowl. Mash with a fork. Serve with your favorite meal. Enjoy!


Cauliflower With Bread Crumbs

8 servings: 1 vegetable, 1/2 starch

2 heads cauliflower

4 slices low-carb bread

1 teaspoon caraway seeds

1 teaspoon salt-free table seasoning blend

1 teaspoon Morton® Lite Salt

1 teaspoon black pepper 

1 tablespoon butter

5 green onions, finely chopped

Parsley

Using a sharp knife, remove outer leaves and thickest part of core from cauliflower, leaving enough core that florets remain attached. In a steamer basket set over boiling water, steam the cauliflower head whole for 20-30 minutes or until easily pierced with a knife.

While cauliflower is steaming, add bread slices and caraway seeds to a bowl of a food processor or blender. Process just until coarse crumbs form. Season with Morton® Lite Salt and pepper.

Heat a small nonstick skillet over medium high heat. Add butter. When butter is melted, add bread crumb mixture and cook, stirring, until bread is golden brown and crisp. Add green onions and cook for one minute. Remove from heat and set aside.

Place warm cauliflower heads into a serving dish. Just before serving, sprinkle bread crumb mixture over top. Garnish with parsley.

 

Healthy Sparkling “Cider”

Don’t be surprised when your loved ones gather around your glass of this sweet concoction. It’s just that beautiful and refreshing! Ice cubes made with edible flowers or dried lavender tea are a show stopping element which instantly add a pic-worthy moment to your meal. Add a chilled glass and you will be in love.

Note: Edible lavender buds, rose petals and additional flowers can be easily ordered online or found at most stores that sell organic foods. 


Ice cube tray

8 ounces water

Edible rose petals or edible lavender buds 

16 ounces sparkling water

1 packet Berry Fusion Thermo-Boost®

Chilled glass

Pour water into an ice cube tray and place small edible flowers in each cube. Allow to freeze. Place your desired glass cup into the freezer and allow to chill for at least 20 minutes. Mix sparkling water with Thermo-Boost. Place ice cubes in chilled glass and pour drink mix over the top. Serve and enjoy!

For an extra touch of elegance, garnish with a sprig of fresh rosemary or young pine.
