Every now and then, something happens that exceeds your expectations. When it includes delicious food, like this Garlic Braised Beef recipe, it makes me even more excited!
This Garlic Braised Beef recipe has a very simple list of ingredients, but the flavor that occurs – especially if you choose to marinate it for a few days before cooking – is incredibly intense and delicious. Serve the Garlic Braised Beef stew over a serving of grain (I’m becoming more hooked on millet) or some mashed cauliflower. Add a Spinach Salad with Pear (Chicken optional) to complete your plate.
There’s only one catch: you must like garlic a lot.
Healthy Beef Recipe with Garlic
- 6 cloves garlic, divided
- 1 cup chicken stock
- 1 tablespoon sherry wine vinegar
- 1/2 teaspoon fresh thyme leaves
- 1/4 teaspoon light salt
- 1/4 teaspoon freshly ground black pepper
- 1 1/2 pounds boneless beef chuck or round, trimmed of fat and cut into 1 inch cubes
- 3/4 cup onion, peeled and chopped
- 3/4 cup carrot, peeled and cut into rounds
- 1 bay leaf
- 2 tablespoons fresh parsley, minced
Peel and mince 4 of the garlic cloves, reserve remaining 2 cloves.
In a large zip top bag, combine garlic cloves with chicken stock, sherry wine vinegar, thyme, salt and pepper. Add steak cubes and massage to coat. Add onion, carrot and bay leaf to bag. Squeeze out excess air and seal. Massage to distribute marinade. Refrigerate overnight or up to 3 days before cooking.
To cook, transfer mixture with all marinade to a saucepan set over medium-high heat. Bring to a boil, then reduce heat to low. Cover and simmer for 1 1/2 hours, or until meat is very tender. Remove lid.
Mince remaining garlic cloves and add to mixture. Stir well and cook uncovered for 5-10 minutes longer, or until liquid is reduced and thickened. Remove bay leaf and add parsley. Stir and serve the Garlic Braised Beef stew over rice or other grain.
Makes 4 servings.
