Program Advisor Ashley from our Highlands Ranch, CO Center shared this delicious and healthy cupcake recipe that is about to become your favorite on-plan treat! This coffee-mug cake only takes a couple of minutes to bake and makes a great little treat for celebrations.
SlimGenics Healthy Cupcake Recipe
- 1 Packet of Old Fashioned Stack Pancake Mix Thermo-Snacks®
- 1/4 Cup of water
- 4 ounces of Plain Greek or Low fat Yogurt
- Pinch of cinnamon
- 2 packets of zero calorie sweetener
- Fruit for topping, like peaches or berries (optional)
Pour Old Fashioned Stack Pancake Mix Thermo-Snacks® into a LARGE coffee mug and add a pinch of cinnamon and 1 packet of sweetener.
Add 1/4 Cup of water and mix until smooth.
Place bowl in the microwave and heat for 1 minute.
Either keep the cup-cake in the mug or pop it out for full cupcake look.
In a separate bowl, mix the yogurt, a sprinkle in cinnamon and the second packet of sweetener.
Top your cupcake with yogurt mixture and fruit for even more flavor!
