Pears have always been one of my favorite fruits, as they have such a unique flavor! They’re not too tart and not too sweet, and they are equally as delicious in a dessert as they are when added to a savory dish. This week’s recipe, a Spinach Salad Chicken and Pear, is a sophisticated salad dish that is still very easy to make. It’s an ideal way to use that leftover chicken you made yesterday, and adding slices of pear makes this dish perfect for spring and summer.
Instead of using a traditional salad dressing, I’ve created this recipe to use honey! Honey, which is high in sugar, is not included on the food list, but can be used in moderation as a salad dressing and should be included as a dressing in your food journal.

Spinach Salad with Chicken and Pear Recipe
- 1/4 cup rice vinegar
- 1 tablespoon fresh lime juice
- 1 tablespoon minced fresh cilantro
- 1 tablespoon honey
- 1/4 teaspoon garlic powder
- 1/8 teaspoon cayenne pepper (or to taste)
- 6 cups baby spinach leaves
- 16 ounces cooked chicken
- 2 cups pear, peeled and cubed
- 3/4 cup red onion, thinly sliced
- 1 avocado, pitted and cubed
In a large bowl, whisk rice vinegar, lime juice, cilantro, honey, garlic powder, and cayenne to blend.
Add spinach to bowl and toss to coat with dressing. Divide spinach between four plates. Add chicken, pear, and red onion to any dressing remaining in bowl and toss to coat. Top spinach with equal portions of chicken, pear, and red onion. Add diced avocado.
Sprinkle with light salt and freshly ground black pepper to taste, and enjoy your Spinach Salad Chicken and Pear.
