Cabbage Rolls with Beef

makes 1 serving | per serving: 1 protein, 2 vegetables

5 ounces uncooked ground sirloin
3 green onions
1 medium tomato, cut into 4 slices
2 large cabbage leaves, blanched
dash of Morton® Lite Salt
dash of black pepper
dash of garlic powder
dash of parsley

Preheat oven to 350 degrees F.

Combine sirloin, green onions and seasonings in a bowl. Blanch cabbage leaves in boiling water to soften.

Place ½ of meat mixture on each cabbage leaf, fold in sides and roll tightly. Secure with a toothpick.

Place in a small baking dish and top with two tomato slices each.

Cover with foil. Bake for 30 minutes.

Lamb Stew with Celery

makes 1 serving | per serving: 1 protein, 1 ½ vegetables

5 ounces uncooked lamb, cut into ½” cubes
1 celery stalk, cut into ½” strips
3 green onions, chopped
1 cup water
1 medium tomato, crushed
pinch of turmeric
2 tablespoons dried mint, crushed
½ c fresh parsley, finely chopped
dash of black pepper

Place lamb, green onions, celery and water in a pot and sauté until onions are transparent. Add remainder of ingredients including herbs.

Cover and simmer for 30 minutes stirring occasionally until meat is tender and most liquid has evaporated.

NOTE: If mixture starts to become too dry, add a little more water.

St. Paddy’s Shake

makes 2 servings | per serving: 1 Thermo-Snack, ½ vegetable

1 Vanilla Delight Shake & Pudding Thermo-Snack
1 Chocolate Mint Bar Thermo-Snack, cut into small squares
3/4 cup frozen spinach
8 ounces of cold water

Place ½ Chocolate Mint Bar and rest of ingredients in a blender. Blend until smooth.

Divide between 2 glasses and top with reserved Chocolate Mint Bar.

NOTE: Feel free to add peppermint extract to taste.
